Sweet Potato, Corn and Black Bean Hash - Dr. Juneann Wadsworth Murphy
12 tsp oil
12 ea. onions chopped
6 ea. Sweet potatoes
12 ea. garlic cloves
6 ea. jalapeño peppers, seeded and chopped
24 tsp ground cumin (8Tbs)
1 Tbs salt (sounds like too much)
4 1/2 C water (sounds like a lot of water) maybe add a little at a time
4 1/2 C frozen Corn
90 oz. Black Beans ( 6 - 15oz cans)
12 Tbs fresh Cilantro, chopped
1 1/2 tsp pepper
6 ea. limes, cut into wedges
Heat oil in a large cast iron skillet. Add onions and sauté until brown in spots (3 - 5 min.) Add sweet potatoes and cook, stirring until it starts to brown in spots (5 - 7 min). Stir in garlic, jalapeño, cumin and salt. Sauté until fragrant (30 sec). Add water and cook, scraping up any brown bits until liquid is absorbed (3 - 5 min.) Stir in corn and black beans and cook until heated through. Stir in cilantro and season with salt and pepper. Serve with lime wedges.

Hi Juneann, just thought I'd let you know not to worry. Cora send me to
the store to get your stuff. Anyway I forgot the list but I got a hell of
a memory. I picked up 24 pounds of onions and about the time I was picking
out the sweet potatoes this doll walked by (had to be 38s) so I made a small
mistake and got 38 sweet potatoes. Also if I remember there was 6 lbs of
Jalapeano peppers. (sounds like a bunch to me) 615 cans of black
beans sounds like plenty. May blow the roof off the ranch house but that
was on your list. Six wedges? I got one in my golf bag. I'll
pick up a couple dozen in lime green? I called the doctor and ask him what
a TBS was and he said I would need to make an appointment. I just got a
box of 144 lot better deal. When I finished shopping I called home and she
said just to double everything. Well after I rented a trailer I got
home Well she said I need to go back and get the corn and
gloves. I picked up 45 cups of corn and a pair of gloves. Don't
worry I got everything you ordered. Don)
